Crispy Vegetable Patties

Ingredients

  • 2 cups grated zucchini
  • 1 cup grated carrot
  • 1 cup green peas (fresh or frozen)
  • 2 eggs
  • 1 cup grated cheese (mozzarella or cheddar)
  • 1 cup breadcrumbs
  • 2 tbsp chopped parsley
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • 2 tbsp oil for frying

Instructions

  1. Grate the zucchini and squeeze out as much liquid as possible.
  2. In a large bowl, combine zucchini, carrot, peas, cheese, eggs, parsley, garlic powder, salt, and pepper.
  3. Add breadcrumbs and mix until a firm dough forms.
  4. Shape the mixture into small oval patties.
  5. Heat oil in a non-stick skillet over medium heat.
  6. Fry the patties for 3–4 minutes per side, until golden brown and cooked through.
  7. Transfer to paper towels to remove excess oil.

Optional: Bake at 200°C (400°F) for 20–25 minutes, turning halfway through, for a lighter version.
