🥗 Healthy Chicken & Veggie Power Bowl

🛒 Ingredients (2–3 servings)

  • 2 chicken breasts (or white fish)
  • 4 eggs, boiled
  • 1 cup broccoli florets (steamed)
  • 1 cup green beans or snap peas
  • 1 cup sweet corn (boiled)
  • 1 avocado or green apple, sliced
  • 1 cup lettuce or mixed greens
  • Optional: cooked white rice or cauliflower rice

🔥 Chicken Marinade

  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & black pepper to taste
  • Optional: lemon juice

🍯 Simple Dressing (optional)

  • 2 tbsp Greek yogurt or olive oil
  • 1 tsp mustard
  • 1 tsp honey
  • Lemon juice + pinch of salt

👩‍🍳 Instructions

  1. Cook the chicken
    Marinate chicken for 15 minutes, then grill or pan-sear until golden and cooked through. Slice.
  2. Prepare veggies
    Steam broccoli and green beans until tender but crisp. Boil corn if needed.
  3. Boil eggs
    Cook eggs for 9–10 minutes, cool, peel, and halve.
  4. Assemble bowls
    Arrange chicken, eggs, vegetables, greens, and fruit neatly in bowls.
  5. Finish
    Drizzle with dressing or serve sauces on the side.
