🥗 Healthy Chicken & Veggie Power Bowl
🛒 Ingredients (2–3 servings)
- 2 chicken breasts (or white fish)
- 4 eggs, boiled
- 1 cup broccoli florets (steamed)
- 1 cup green beans or snap peas
- 1 cup sweet corn (boiled)
- 1 avocado or green apple, sliced
- 1 cup lettuce or mixed greens
- Optional: cooked white rice or cauliflower rice
🔥 Chicken Marinade
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt & black pepper to taste
- Optional: lemon juice
🍯 Simple Dressing (optional)
- 2 tbsp Greek yogurt or olive oil
- 1 tsp mustard
- 1 tsp honey
- Lemon juice + pinch of salt
👩🍳 Instructions
- Cook the chicken
Marinate chicken for 15 minutes, then grill or pan-sear until golden and cooked through. Slice. - Prepare veggies
Steam broccoli and green beans until tender but crisp. Boil corn if needed. - Boil eggs
Cook eggs for 9–10 minutes, cool, peel, and halve. - Assemble bowls
Arrange chicken, eggs, vegetables, greens, and fruit neatly in bowls. - Finish
Drizzle with dressing or serve sauces on the side.
